There are so many if not thousands of ways to make enchiladas, but 'laugh''s answer is a great basic recipe if you've never made them before. You can also season the ground beef with a packet of taco seasoning and add a little can of diced green chiles. I like adding some beans and rice to the beef mixture before rolling the tortillas. You can use corn or flour tortillas, any size as long as they fit in your baking dish. I'd get either 2 packets or 2 cans of enchilada sauce since there never seems to be enough. You can even use different cheeses like monterey jack or jalapeno jack. So just start with that recipe and you'll find new and different ways to make it your own!
